Typically in the UK we slaughter our cattle around 22 months. But in parts of Spain – France and Italy too, some cattle are left to mature on the field for up to seventeen years. These old cows are considered a real treat - rich, deeply flavoured and speckled with creamy yellow fat. Our vintage beef is from ‘retired’ cows around 12 years old. Definitely a ‘slow food’ treat!
